  • 1 15-ounce can pumpkin purée
  • 2 cloves garlic, minced
  • ½ lemon, juiced
  • ⅓ cup tahini
  • 1 tablespoon pure maple syrup
  • 1 teaspoon kosher salt
  • 1 teaspoon ground cumin
  • ¾ teaspoon ground cinnamon
  • pinch cayenne pepper
  • ¼ cup olive oil
  • ¼ cup ice water
  • extra olive oil for garnish
  • pomegranate arils for garnish
  • toasted pepitas for garnish
  • finely chopped fresh rosemary for garnish
  • sliced apples for serving

Instructions

  1. In a food processor, combine chickpeas, pumpkin purée, and garlic. Pulse until broken down.
  2. Add lemon juice, tahini, maple syrup, kosher salt, cumin, cinnamon, and cayenne pepper. Process while slowly adding olive oil until well blended (about 2-3 minutes).
  3. With the processor running, gradually add ice water until desired consistency is reached.
  4. Transfer to a bowl and garnish with olive oil and toppings of your choice before serving.
