  • 2 cups digestive cookies or graham crackers
  • ½ cup melted butter
  • 3 cups fresh apple cider
  • 3 bricks of softened cream cheese
  • 1 cup brown sugar
  • 1 cup sour cream
  • 3 large eggs
  • Mulling spices
  • Cinnamon
  • 2 tablespoons powdered sugar
  • ¼ teaspoon salt
  • 2 tablespoons all-purpose flour

Instructions

  1. Reduce apple cider with mulling spices in a pot on high heat for about an hour until syrupy. Let cool.
  2. Preheat oven to 350°F and prepare the crust by mixing crushed cookies with melted butter, salt, and powdered sugar. Press into a greased springform pan and bake for 10 minutes.
  3. Lower oven temperature to 325°F. Beat cream cheese and brown sugar until smooth, then add sour cream, vanilla, salt, cinnamon, and cooled cider. Mix in eggs and flour gently.
  4. Pour the filling into the crust placed in a water bath. Bake for around 90 minutes until edges are set.
  5. Cool gradually in the oven before refrigerating for at least 8 hours.
