  • 4 tablespoons cold unsalted butter
  • 2 large eggs
  • ⅓ cup granulated sugar
  • ½ cup brown sugar
  • ⅓ cup light olive oil
  • ¼ cup sour cream
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • ¼ teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour

Instructions

  1. Preheat oven to 350°F and grease a 9-inch square baking dish with butter.
  2. In a sauté pan, boil apple cider until reduced by half (about 5 minutes). Measure out ¾ cup and whisk in diced butter until melted.
  3. In a bowl, mix eggs, sugars, olive oil, sour cream, baking powder, baking soda, spices, and salt.
  4. Stir in the warm cider mixture until combined.
  5. Gently fold in flour until just mixed.
  6. Pour batter into the prepared dish and bake for 22-25 minutes or until golden.
  7. Cool slightly, then top with room-temperature butter and sprinkle with cinnamon-sugar.
