Ingredients

Scale
  • 34 lbs turkey breast (bone-in or boneless)
  • 2 cups apple cider
  • 4 tbsp butter
  • 1/4 cup brown sugar
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 2 cloves garlic (minced)
  • 1/2 tsp cinnamon
  • Optional: fresh herbs and sliced apples for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Pat the turkey dry and season generously with salt and pepper.
  2. In a skillet, melt 2 tablespoons of butter over medium-high heat. Sear the turkey breast on all sides until golden brown (about 3-4 minutes per side).
  3. Transfer the seared turkey to a roasting pan and pour in 1 cup of apple cider to keep it moist during roasting.
  4. In a saucepan, combine the remaining cup of apple cider, brown sugar, apple cider vinegar, Dijon mustard, minced garlic, cinnamon, and optional cloves. Bring to a simmer and cook until thickened (10-15 minutes).
  5. Brush the glaze generously over the turkey and roast in the oven, basting every 15 minutes until it reaches an internal temperature of 165°F (74°C) (approximately 1.5 to 2 hours).
  6. Allow resting for 10-15 minutes before carving and serve garnished with fresh herbs and sliced apples.
