  • 2 teaspoons instant yeast
  • 1 teaspoon fine sea salt
  • 1/3 cup whole milk (room temperature)
  • 1/3 cup heavy cream (room temperature)
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 6 tablespoons unsalted butter (room temperature)
  • 1/2 cup unsalted butter (room temperature)
  • 2/3 cup brown sugar (packed)
  • 2 teaspoons ground cinnamon
  • 4 tablespoons unsalted butter (room temperature)
  • 2 ounces cream cheese (room temperature)
  • 1 cup powdered sugar
  • 2 1/2 tablespoons heavy cream
  • 2 tablespoons apple butter

Instructions

  1. Prepare the filling by cooking diced apples with apple butter, sugar, water, lemon juice, cinnamon, vanilla extract, and salt until slightly softened.
  2. Make the dough by mixing warm water, cornstarch, bread flour, sugar, yeast, salt, milk, cream, egg, and tangzhong until smooth. Knead until elastic.
  3. Let the dough rise in an oiled bowl covered with a cloth until doubled in size (about 1 hour).
  4. Roll out the dough into a rectangle and spread softened butter over it. Sprinkle brown sugar and cinnamon before adding the apple filling.
  5. Roll tightly into a log and slice into equal pieces. Place cut-side up in a greased baking dish and let rise for another 30 minutes.
  6. Bake at 350°F (175°C) for about 30 minutes until golden brown.
  7. Prepare the frosting by blending butter, cream cheese, powdered sugar, heavy cream, and apple butter until smooth. Drizzle over warm rolls.
