  • 350 g Lotus biscoff cookies
  • 150 g unsalted butter (melted)
  • 3 tart apples (peeled and sliced)
  • 690 g cream cheese (softened)
  • 75 g granulated sugar
  • 100 g Greek yogurt
  • 3 large eggs (room temperature)
  • Cinnamon, brown sugar, and cornstarch for flavor
  • 55 g unsalted butter (melted) for streusel
  • 50 g all-purpose flour for streusel
  • 50 g brown sugar for streusel
  • 20 g rolled oats for streusel

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a springform pan.
  2. Crush biscoff cookies and mix with melted butter to form the crust; press into the bottom of the pan.
  3. Toss apple slices with brown sugar, cinnamon, and cornstarch; set aside.
  4. Beat cream cheese and granulated sugar until smooth, then add Greek yogurt, spices, and eggs one at a time.
