  • 30g light brown soft sugar (for filling)
  • 1/2 tsp cinnamon (for filling)
  • 1/4 tsp mixed spice (for filling)
  • 1 tsp cornflour (cornstarch) (for filling)
  • 10g unsalted butter (for filling)
  • 8g light brown soft sugar (for crumble topping)
  • 17g plain flour (for crumble topping)
  • 1/8 tsp cinnamon (for crumble topping)
  • 175g unsalted butter (softened, for cupcakes)
  • 175g light brown soft sugar (for cupcakes)
  • 3 large eggs (for cupcakes)
  • 175g self-raising flour (for cupcakes)
  • 1/2 tsp cinnamon (for cupcakes)
  • 1/4 tsp mixed spice (for cupcakes)
  • 175g unsalted butter (softened, for frosting)
  • 350g icing sugar (for frosting)
  • 1 1/2 tsp cinnamon (for frosting)
  • 23 tbsp milk (for frosting)

Instructions

  1. Prepare the apple filling by peeling, coring, and chopping apples. Cook with light brown sugar, cornflour, cinnamon, and mixed spice over low heat until soft. Let cool.
  2. For the crumble topping, mix plain flour, light brown sugar, and cinnamon in a bowl. Rub in butter until crumbly. Bake on a lined tray at 180C for 10-15 minutes until golden.
  3. Preheat oven to 160C for cupcakes. Beat softened butter and light brown sugar until creamy. Add eggs one at a time, then fold in self-raising flour and spices.
  4. Fill cupcake cases two-thirds full with batter and bake for 20-25 minutes until risen and golden. Cool completely.
  5. Core cooled cupcakes and fill with apple mixture. Make frosting by beating softened butter with icing sugar, cinnamon, and milk until smooth; frost each cupcake.
  6. Top with remaining apple filling and sprinkle crumble topping.
