  • ½ cup unsalted butter (melted and room temperature)
  • 2 large eggs (room temperature)
  • 1 cup milk (room temperature)
  • 1½ cups diced apples (Granny Smith or Honeycrisp)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a muffin tin with paper liners.
  2. Prepare the crumble by whisking together flour, brown sugar, granulated sugar, and cinnamon in a medium bowl. Stir in melted butter until clumps form.
  3. In a separate bowl, mix flour, baking powder, salt, and cinnamon.
  4. In a large bowl, cream together brown sugar, granulated sugar, and room-temperature butter until fluffy. Add eggs, sour cream (or yogurt), and vanilla extract; mix well.
  5. Gradually combine dry ingredients with wet ingredients. Fold in milk and diced apples.
  6. Fill muffin cups about three-quarters full with batter and top generously with crumble mixture.
