Scale
  • 300 g all-purpose flour
  • 60 g granulated sugar
  • 1 tsp salt
  • 220 g cold unsalted butter (cut into cubes)
  • 110 g water
  • 1 kg apples (such as Pink Lady or Fuji)
  • 75 g unsalted butter (for filling)
  • 190 g brown sugar
  • 1¼ tsp ground cinnamon
  • 1¼ tbsp cornstarch
  • ¼ tsp salt
  • 2½ tbsp water (for filling)
  • 5 tbsp almond flour (or finely ground nuts)
  • 1 egg
  • 1 tbsp water (for egg wash)
  • Vanilla ice cream (for serving)

Instructions

  1. Prepare the Crust: In a bowl, combine flour, granulated sugar, and salt. Cut in cold butter until crumbly. Gradually add water until dough forms; chill.
  2. Prepare the Filling: Peel and slice apples. Melt butter in a skillet, add apples, brown sugar, cinnamon, cornstarch, salt, and water; cook until apples soften.
  3. Roll Out Dough: On a floured surface, roll out chilled dough to about 0.5 cm thick for both bottom and top crusts.
  4. Assemble the Pie: Place one dough layer in a pie dish, fill with apple mixture, top with another dough layer or create a lattice design.
  5. Bake: Preheat oven to 180°C (350°F) and bake for about 80 minutes until golden brown.
  6. Serve: Allow cooling slightly before slicing; serve warm with vanilla ice cream.
