  • 3 cups butternut squash, peeled, seeded, cubed
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 340 g Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 225 g bow tie pasta
  • 1 tablespoon olive oil
  • 340 g cooked turkey sausage
  • 5 cloves garlic, minced
  • 2 tablespoons butter
  • Salt and pepper to taste
  • ¼ teaspoon smoked paprika
  • Fresh thyme leaves

Instructions

  1. Preheat oven to 200°C (400°F). Toss cubed butternut squash with olive oil, salt, and pepper; spread on a baking sheet and roast for 15-20 minutes.
  2. Trim and halve Brussels sprouts; toss with olive oil, salt, and pepper. Roast on a separate sheet until crispy.
  3. Cook bow tie pasta according to package directions; reserve some pasta water before draining.
  4. In a skillet over medium heat, brown sliced cooked turkey sausage in olive oil; remove when done.
  5. Sauté minced garlic in the same skillet until fragrant, then add butter until melted. Toss in cooked pasta along with seasoning.
  6. Combine all ingredients in the skillet; mix gently and adjust seasoning as needed.
