  • 3 cups butternut squash, peeled, seeded, cubed
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • 340 g Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil
  • 225 g bow tie pasta
  • 1 tablespoon olive oil
  • 340 g cooked chicken or turkey sausage
  • 5 cloves garlic, minced
  • 2 tablespoons butter or vegan alternative
  • ¼ teaspoon smoked paprika
  • fresh thyme leaves

Instructions

  1. Preheat oven to 200°C. Toss butternut squash with olive oil, salt, and pepper; spread on a lined baking sheet and roast for 15-20 minutes.
  2. Prepare Brussels sprouts by tossing with olive oil, salt, and pepper; roast on another baking sheet for 20-30 minutes until crispy.
  3. Boil salted water in a large pot; cook bow tie pasta according to package instructions. Reserve some pasta water before draining.
  4. In a skillet over medium heat, sauté sliced sausage until browned; remove from skillet.
  5. In the same skillet, add minced garlic and butter; sauté until fragrant. Combine drained pasta with salt, pepper, and smoked paprika.
  6. Add roasted vegetables and sausage back into the skillet; mix gently with fresh thyme.
