  • 1 cup pumpkin puree
  • 2 large eggs
  • 1 cup light brown sugar (or coconut sugar)
  • 1/3 cup vegetable oil
  • 1 tablespoon vanilla extract
  • 11/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon pumpkin pie spice
  • 1/4 teaspoon salt
  • 1 cup semisweet chocolate chips

Instructions

  1. Preheat your oven to 350°F. Line a 9×5 loaf pan with parchment paper.
  2. In a large bowl, whisk together mashed bananas, pumpkin puree, eggs, light brown sugar (or coconut sugar), vegetable oil, and vanilla extract until smooth.
  3. In another bowl, whisk together all-purpose flour, baking soda, pumpkin pie spice, and salt.
  4. Gently fold the dry ingredients into the wet mixture until just combined. Add chocolate chips and fold again.
  5. Pour batter into the prepared loaf pan and smooth the top. Bake for about 55-60 minutes or until a toothpick inserted comes out clean.
