  • ½ cup Thai sweet chili sauce
  • 1 teaspoon Sriracha
  • 2 tablespoons honey
  • 1 ½ pounds boneless skinless chicken tenderloins
  • 1 cup buttermilk
  • ¾ cup all-purpose flour
  • ½ cup cornstarch
  • 1 large egg
  • 2 cups panko breadcrumbs
  • Canola oil (for frying)
  • Parsley (chopped, for garnish)

Instructions

  1. In a bowl, whisk together mayonnaise, Thai sweet chili sauce, Sriracha, and honey to create the bang bang sauce; set aside.
  2. Marinate chicken in buttermilk for at least 10 minutes for added moisture.
  3. In another bowl, mix flour, cornstarch, egg, Sriracha, garlic powder, salt, black pepper, and cayenne (if desired) until smooth. Coat chicken in this mixture followed by rolling in panko breadcrumbs.
  4. Heat canola oil in a pan over medium-high heat and fry the breaded chicken until golden brown (about 6 minutes).
  5. Drain on paper towels and drizzle generously with the bang bang sauce before serving.
