  • 1 tsp ground cinnamon

  • 3 oz cooking oil
  • 2 large eggs
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1 1/4 cups chocolate chips (divided)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, mix together flour, baking powder, baking soda, salt, cinnamon, cloves, and nutmeg.
  3. In a large bowl, whisk together cooking oil, eggs, sugar, vanilla extract, and pumpkin puree until smooth. Fold in one cup of chocolate chips.
  4. Gradually add the dry ingredients into the wet mixture until just combined; be careful not to overmix.
  5. Spray an 8" x 4" loaf pan with oil spray. Pour in the batter and sprinkle with remaining chocolate chips.
  6. Bake for 50-60 minutes. A toothpick inserted into the center should come out clean when done. Let cool before slicing.
