  • 56 medium sweet potatoes (peeled & cut into thin medallions)
  • ¼ cup unsalted butter
  • ¼ cup brown sugar
  • ½ cup water
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ¼ cup chopped pecans (or walnuts)
  • ½ cup mini vegan marshmallows

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Slice peeled sweet potatoes into thin medallions and arrange them in a baking dish.
  3. In a saucepan over medium heat, combine unsalted butter, brown sugar, water, spices, and salt until smooth.
  4. Brush three-quarters of the sauce over the sweet potato medallions and cover with foil. Bake for 45-50 minutes.
  5. Remove foil, drizzle with remaining sauce, sprinkle with pecans and marshmallows.
  6. Broil for 1-2 minutes until marshmallows are golden.
  7. Cool for 10-15 minutes before serving.
