  • 14.5 ounces black beans, rinsed and drained
  • 1 cup red pepper, cut into 1” pieces
  • 1 ½ cups green pepper, cut into 1" pieces
  • 3 tablespoons honey
  • 3 tablespoons lime juice
  • Corn or flour tortillas

Instructions

  1. Preheat oven to 425°F.
  2. In a bowl, mix cubed sweet potatoes with olive oil and spices. Toss until coated.
  3. Spread sweet potatoes on a greased baking sheet and roast for 20 minutes.
  4. Add peppers to the baking sheet and roast for an additional 20 minutes.
