  • 2 boneless, skinless chicken breasts
  • 8 oz spaghetti or penne pasta
  • 2 cups cherry tomatoes, diced
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 2 tbsp balsamic vinegar
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Italian seasoning, garlic powder, salt, and pepper

Instructions

  1. Cook the pasta in salted boiling water until al dente. Drain and set aside.
  2. Season chicken breasts with Italian seasoning, garlic powder, salt, and pepper.
  3. Heat olive oil in a skillet over medium heat. Cook the chicken for 5-7 minutes per side until golden brown and cooked through. Let rest before slicing.
  4. In a bowl, mix diced tomatoes, minced garlic, chopped basil, balsamic vinegar, olive oil, and salt for the bruschetta topping.
  5. Toss the cooked pasta in the same skillet where you cooked the chicken. Slice the chicken and place it on top of the pasta along with the bruschetta topping.
  6. Sprinkle with Parmesan cheese and garnish with extra basil leaves if desired.
