  • 1 cup (240 ml) of all-purpose flour
  • ½ cup (100 g) of granulated sugar
  • ½ cup (120 g) of ricotta cheese
  • 1 large egg
  • 1 tsp of vanilla extract
  • 1 tsp of lemon zest
  • ½ cup (75 g) of mini chocolate chips
  • ½ cup (75 g) of chopped pistachios
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour and sugar until combined.
  3. In another bowl, mix ricotta cheese, egg, vanilla extract, and lemon zest until smooth.
  4. Gradually add the dry ingredients to the wet mixture until a soft dough forms.
  5. Cover the dough and let it rest for about 30 minutes.
  6. Roll out the dough on a floured surface to about ¼ inch thick; cut into rectangles (2×3 inches).
  7. Mix additional ricotta with chocolate chips and pistachios for the filling.
  8. Place filling in the center of each rectangle; fold over and seal edges.
  9. Bake for 15-18 minutes until golden brown; cool briefly before transferring to a wire rack.
