  • 4 large russet potatoes
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 1/4 cup chopped cilantro
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 400°F (200°C). Scrub and dry the russet potatoes. Pierce each potato multiple times with a fork.
  2. Rub each potato with olive oil and season with salt and pepper. Bake for about 45 minutes until tender.
  3. In a skillet over medium heat, cook the ground beef until browned (about 7-10 minutes), draining any excess fat.
  4. Stir in taco seasoning according to package instructions and let simmer for five minutes.
  5. Once potatoes are done, allow them to cool slightly before cutting a slit down the center of each and squeezing gently to open.
  6. Fill each potato with seasoned beef and top generously with shredded cheddar cheese.
  7. Return to the oven for an additional five minutes until cheese melts, then add sour cream, green onions, tomatoes, olives, and cilantro before serving.
