  • 1 cup mascarpone cheese
  • ⅓ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 ½ cups strong brewed coffee (cooled)
  • 1 package (about 7 oz) ladyfinger cookies
  • 1 ½ cups cherry preserves
  • ½ cup fresh cherries (pitted and halved)
  • Unsweetened cocoa powder (for dusting)

Instructions

  1. In a large bowl, whip heavy cream until soft peaks form. Gently fold in mascarpone cheese, powdered sugar, and vanilla extract until smooth.
  2. In a shallow bowl, combine cooled coffee with almond extract.
  3. Quickly dip ladyfingers into the coffee mixture and line them at the bottom of a dish.
  4. Spread half of the mascarpone mixture over the ladyfingers, then add half of the cherry preserves and fresh cherries.
  5. Repeat layering with remaining ingredients: another layer of ladyfingers, mascarpone mix, and cherries.
  6. Cover tightly and refrigerate for at least 6 hours or overnight.
  7. Dust with cocoa powder before serving and top with fresh cherries if desired.
