  • 1/4 cup cocoa powder

  1. In a large bowl, beat mascarpone cheese and heavy cream until smooth and fluffy.

  3. In another bowl, combine sugar and cherry preserves; fold into the mascarpone mixture.
  4. Gently stir in chopped cherries.
  5. Dip ladyfingers quickly into a mix of cherry juice and water; layer them in a baking dish.
  6. Spread half of the mascarpone mixture over the ladyfingers; repeat the layers.
  7. Cover and chill for at least 4 hours or overnight.
  8. Before serving, dust with cocoa powder.
