  • 1/2 cup European-style unsalted butter, browned and cooled
  • 1 large egg yolk
  • 1/2 cup canned pumpkin, blotted
  • 2 tsp vanilla extract
  • 1/2 tsp maple extract, optional
  • 1/2 cup granulated sugar for coating

Instructions

  1. Prepare brown butter by melting it in a saucepan until golden brown. Allow to cool.
  2. Blot excess moisture from canned pumpkin using paper towels.
  3. Whisk together flour, spice blend, baking soda, and salt in a bowl.
  4. In a mixing bowl, combine cooled brown butter, brown sugar, and maple syrup until smooth.
  5. Stir in egg yolk, pumpkin puree, vanilla extract, and optional maple extract until well mixed.
  6. Gradually add dry ingredients to wet mixture until just combined; avoid overmixing.
  7. Chill the dough in the refrigerator for at least 8 hours or overnight.
  8. Preheat oven to 350°F (177°C) and prepare baking sheets lined with parchment paper.
  9. Mix granulated sugar with spice blend for coating.
  10. Scoop dough into balls, roll in spiced sugar, and place on baking sheets spaced apart.
  11. Bake for 12-14 minutes until edges are slightly golden. Cool on racks.
