  • 250g all-purpose flour
  • 30g sugar
  • 1 teaspoon salt
  • 10g fresh yeast
  • 150g beaten eggs (about 3 large)
  • 165g unsalted butter, softened
  • 25 cl whole milk
  • 1 vanilla pod
  • 2 egg yolks
  • 50g sugar (for custard)
  • 20g cornstarch
  • 50g mini chocolate chips

Instructions

  1. Combine flour, sugar, salt, and crumbled yeast in a stand mixer. Add beaten eggs and knead until smooth. Gradually mix in softened butter until you achieve a dense dough.
  2. Let the dough rise in a warm place for about 2 hours until doubled.
  3. For the custard, heat milk and butter with the vanilla pod. In another bowl, whisk egg yolks, sugar, cornstarch, and slowly mix in hot milk while whisking. Return to heat until thickened.
  4. Roll out dough into a rectangle, spread custard and sprinkle chocolate chips. Fold over and cut into pieces; let rise again.
  5. Brush with egg wash and bake at 350°F (180°C) for about 10-12 minutes until golden. Brush with sugar syrup after baking.
