  • ½ cup Dutch-processed cocoa powder
  • 1½ teaspoons baking powder
  • 1½ teaspoons baking soda
  • ½ teaspoon salt
  • ½ cup whole milk
  • 2 large eggs
  • ½ cup sour cream
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon espresso powder
  • 1 cup hot water
  • 4 large egg yolks
  • 2 tablespoons granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 2 cups heavy cream, divided
  • 3.5 oz dark chocolate, chopped
  • 4.5 oz white chocolate, chopped
  • 5 oz milk chocolate, chopped
  • ⅓ cup heavy cream

Instructions

  1. Preheat the oven to 350°F (180°C). In a bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  2. In another bowl, whisk eggs, milk, sour cream, oil, and vanilla until smooth. Dissolve espresso in hot water and combine with the wet ingredients.
  3. Gently mix wet and dry ingredients until blended. Divide the batter into two greased 8-inch round cake pans and bake for 35 minutes or until a toothpick comes out clean.
  4. For the mousse base: Heat 1 cup of cream with vanilla until steaming. Whisk egg yolks with sugar and cornstarch until pale; temper with warm cream then cook until thickened.
  5. Divide custard into two bowls; add melted dark chocolate to one and white chocolate to the other. Fold whipped cream into each mixture.
  6. Assemble by layering dark mousse on one cake layer followed by white mousse; repeat with the second layer. Chill for at least four hours.
  7. For ganache: Heat remaining cream and pour over chopped milk chocolate; stir until smooth. Pour over chilled cake and decorate as desired.
