  • 3 cups Rice Krispies cereal
  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter
  • 1 cup mini vegan marshmallows
  • 1 cup chocolate chips
  • 1/2 tsp vanilla extract (optional)
  • Pinch of sea salt (optional)

Instructions

  1. In a medium saucepan over low heat, melt the unsalted butter and mini vegan marshmallows together while stirring until smooth.
  2. Stir in the creamy peanut butter and vanilla extract until well combined.
  3. In a large bowl, add the Rice Krispies and pour the peanut butter mixture over them. Gently fold until evenly coated.
  4. Line a muffin tin with paper liners. Spoon the mixture into each cup and press down gently to form a flat surface.
  5. Melt the chocolate chips in the microwave in short bursts, stirring until smooth. Spoon melted chocolate over each cup and spread evenly. Optionally sprinkle with sea salt.
  6. Allow cups to cool at room temperature for about 20 minutes or refrigerate to speed up setting time.
