  • 1/4 cup fresh lime juice (about 2 limes)
  • 1/4 cup olive oil
  • 1/4 cup fresh cilantro, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cooked rice (white or brown)
  • 1 can black beans, rinsed and drained
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1/2 cup red onion, diced
  • Extra cilantro for garnish
  • Lime wedges for serving

Instructions

  1. In a medium bowl, whisk together lime juice, olive oil, chopped cilantro, garlic, cumin, chili powder, salt, and pepper to create the marinade.
  2. Place flank steak in a resealable bag or dish; pour marinade over steak and refrigerate for 30 minutes to 4 hours.
  3. Cook rice according to package instructions.
  4. Heat black beans in a saucepan until warmed through.
  5. Prepare corn by boiling or sautéing fresh corn or microwaving frozen corn until heated.
  6. Preheat grill to medium-high heat; grill marinated steak for 4-5 minutes on each side until medium-rare.
  7. Allow steak to rest before slicing against the grain.
  8. Assemble bowls starting with rice as the base; top with black beans, corn, sliced steak, cherry tomatoes, avocado, red onion, and optional feta cheese.
  9. Garnish with cilantro and serve with lime wedges.
