  • 11/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened (1 stick)
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup light brown sugar (packed)
  • 11/2 teaspoons ground cinnamon
  • 1 large apple (peeled, cored, and chopped into small pieces)
  • 2 tablespoons brown sugar for topping
  • 1/4 teaspoon ground cinnamon for topping
  • 3/4 cups confectioners’ sugar for glaze
  • 1/4 teaspoon ground cinnamon for glaze
  • 2 tablespoons water for glaze

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8.5 x 4.5 inch loaf pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. Beat softened butter, sugar, and vanilla until creamy. Add eggs one at a time.
  4. Alternate adding flour mixture and milk until just combined.
  5. Prepare apple filling by mixing brown sugar, cinnamon, and chopped apples.
  6. Layer half of the batter into the pan, add half of the apple mixture and swirl gently.
  7. Repeat layering with remaining batter and apple mixture; then top with the cinnamon-sugar mix.
  8. Bake for 45-55 minutes or until a toothpick comes out clean.
  9. Cool before glazing with a mixture of confectioners' sugar, cinnamon, and water.
