  • 45 pound turkey breast, bone-in, skin-on
  • 1/2 cup unsalted butter, softened
  • Zest of 1 lemon
  • Zest of 1 orange
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • 1 tablespoon fresh sage, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 onion, quartered
  • 1 lemon, sliced
  • 1 orange, sliced
  • 1/2 cup chicken broth

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix softened butter with lemon zest, orange zest, garlic, rosemary, thyme, sage, salt, and pepper until well combined.
  3. Gently loosen the skin of the turkey breast and rub half of the herb mixture under the skin and the remaining on top.
  4. In a roasting pan, place quartered onions and citrus slices. Pour chicken broth around them.
  5. Place the seasoned turkey breast on top of the aromatics and roast for approximately 1 hour and 40 minutes or until the internal temperature reaches 165°F (75°C), basting occasionally.
