  • 1 cup chopped pecans or almonds
  • 1 cup granulated sugar (200 grams)
  • 1 cup butter (226 grams)
  • 1/2 teaspoon salt
  • 1/4 cup water (60 ml)
  • 1 teaspoon vanilla
  • Chocolate chips for topping
  • Additional chopped nuts and flaked sea salt for garnish

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a heavy saucepan, combine butter, sugar, salt, water, and vanilla over medium heat. Stir constantly until melted.
  3. Increase heat and bring to a boil, stirring until the mixture reaches about 290°F (143°C) or a deep amber color.
  4. Quickly stir in the chopped nuts and pour the mixture onto the prepared baking sheet, spreading it evenly.
  5. While warm, sprinkle chocolate chips over the toffee and let sit until slightly melted before spreading.
  6. Garnish with additional nuts and flaked sea salt if desired. Allow to cool completely before breaking into pieces.
