  • 1 cup coconut milk
  • 1 1/2 cups heavy whipping cream
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 cup sweetened shredded coconut (toasted or fresh)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, beat butter and sugar until fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla and coconut extracts.
  4. Gradually mix in dry ingredients alternately with coconut milk until just combined.
  5. Pour batter into prepared pans and bake for 25–30 minutes or until a toothpick comes out clean. Cool completely.
  6. For frosting, beat cream cheese with powdered sugar until smooth; whip heavy cream until stiff peaks form and fold into cream cheese mixture.
  7. Assemble cake by layering with frosting between the cakes and covering the top and sides with remaining frosting. Press shredded coconut onto the cake.
