  • 1 small onion, diced
  • 1/2 bell pepper, diced
  • 2 cups fresh baby spinach, chopped
  • 1 1/2 cups cottage cheese
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil and sauté diced onion and bell pepper until soft (3–4 minutes).
  3. Add chopped spinach to the skillet and cook until wilted (2–3 minutes), seasoning with garlic powder, salt, and pepper.
  4. In a large bowl, whisk together eggs, milk, and cottage cheese until smooth; stir in Italian seasoning along with additional salt and pepper.
  5. Fold in the cooked veggies and shredded cheese until well combined.
  6. Grease a 9-inch pie dish and pour the mixture evenly into it.
  7. Bake for 40–45 minutes until golden brown on top and set in the center.
  8. Allow to cool for 5–10 minutes before slicing.
