  • 8 ounces baby bella mushrooms, sliced
  • 4 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 ribs celery, diced
  • 1 large sweet potato, peeled and diced
  • 1 small onion, diced
  • 1 can (14 ounces) unsweetened coconut milk
  • Kale, chopped

Instructions

  1. In a large pot, bring vegetable stock to a gentle simmer and add wild rice. Cook for about 40 minutes until tender.
  2. In a separate pan, sauté onions and garlic in vegetable stock until translucent.
  3. Add sweet potato, carrots, celery, and mushrooms to the pot with simmering stock; cook until slightly tender (about 10 minutes).
  4. Stir in Old Bay seasoning and bay leaf; season with salt and pepper.
  5. Incorporate coconut milk and chopped kale; let simmer for another 10–15 minutes.
  6. Remove bay leaf before serving.
