  • 1.5 pounds boneless, skinless chicken thighs or breasts
  • 34 medium carrots, peeled and chopped
  • 12 stalks celery, chopped
  • 1/2 medium yellow or white onion, chopped
  • 45 cloves garlic, minced
  • 4 cups low-sodium chicken stock or broth
  • 1 cup cream or half-and-half
  • 1 pound potato gnocchi
  • 3 cups baby spinach
  • salt and black pepper to taste
  • 1 tablespoon Italian seasoning
  • 1 teaspoon Better than Bouillon chicken seasoning base (optional)
  • pinch red pepper flakes (optional)
  • 12 tablespoons cornstarch

Instructions

  1. Place chicken in the slow cooker and add carrots, celery, onion, garlic, salt, and pepper.
  2. Pour in chicken stock and stir gently. Cover and cook on low for 6-8 hours or high for 4 hours.
  3. Shred the chicken using two forks once cooked.
  4. In a bowl, whisk cream with cornstarch until smooth; pour into the slow cooker along with gnocchi and spinach. Stir well.
  5. Cook on high for another 30-45 minutes until heated through.
  6. Serve warm and enjoy!
