  • 1½ cups orzo pasta
  • 3 cups vegetable broth
  • 2 tablespoons butter

  • ½ cup grated Parmesan cheese
  • ¼ cup heavy cream
  • 2 cups baby spinach, roughly chopped
  • ½ tsp dried thyme (optional)
  • Pinch of red pepper flakes (optional)
  • 2 tablespoons fresh parsley, finely chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C). Toss diced butternut squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for about 25–30 minutes until tender.
  2. In a large saucepan over medium heat, melt butter and sauté minced garlic for 1 minute. Add orzo and toast lightly for about 2 minutes.
  3. Pour in vegetable broth and simmer for about 10–12 minutes until orzo is tender, stirring occasionally.
  4. Stir in Parmesan cheese and heavy cream to create a rich sauce. Add chopped spinach and cook until wilted.
  5. Carefully fold in roasted butternut squash and adjust seasoning before serving warm.
