  • 1 cup orzo pasta
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • 2 cups chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes (optional)

Instructions

  1. Season chicken breasts with salt, pepper, garlic powder, and Italian seasoning. Heat olive oil in a skillet over medium-high heat and sear chicken for 5–6 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F/75°C). Set aside.
  2. In the same skillet, reduce heat to medium and add butter; sauté minced garlic for about 30 seconds. Add orzo and toast for 1–2 minutes.
  3. Stir in sun-dried tomatoes and pour in chicken broth. Bring to a simmer and cover; cook for about 10 minutes until orzo is tender.
  4. Pour in heavy cream and stir in grated Parmesan cheese until melted. Add chopped spinach; stir until wilted.
  5. Return chicken to the skillet and spoon sauce over it. Simmer gently for another couple of minutes before serving.
