  • 2 sheets of puff pastry (thawed)
  • ⅔ cup granulated sugar
  • ½ cup cornstarch
  • ¼ tsp kosher salt
  • 3½ cups whole milk (warm)
  • 6 large egg yolks (room temperature)
  • 1 vanilla bean (seeds scraped out) or 2 tsp vanilla bean paste
  • 4 Tbsp unsalted butter (cold, cubed)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat oven to 400°F (200°C). Roll out puff pastry to about 9×9 inches and prick with a fork. Place on baking trays and weigh down.
  2. Bake for 35-45 minutes until golden brown. Cool completely.
  3. Trim edges of puff pastry for a snug fit in an 8×8-inch pan.
  4. In a saucepan, whisk together granulated sugar, cornstarch, and salt; then mix in egg yolks.
  5. Warm milk in another saucepan until steaming but not boiling.
  6. Gradually whisk warm milk into egg mixture, then combine back into the saucepan.
  7. Cook over medium heat while whisking until thickened; stir in vanilla seeds and cold butter.
  8. Line the pan with aluminum foil, place one puff pastry layer at the bottom, pour custard on top, and cover with the second layer of pastry. Refrigerate for at least four hours or overnight.
  9. Slice using an overhanging foil for easy removal; dust with powdered sugar before serving.
