  • 1 large sweet onion (chopped)
  • 34 cloves garlic (minced)
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • 1 ½ pounds boneless chicken breast
  • 30 ounces canned cannellini beans (drained)
  • 7 ounces chopped green chiles
  • 4 cups chicken broth
  • 8 ounces cream cheese (cut into cubes)

Instructions

  1. Melt butter in a large pot over medium heat. Sauté chopped onion until translucent (about 5 minutes).
  2. Stir in minced garlic, cumin, and oregano; sauté for an additional minute.
  3. Add chicken breasts and enough chicken broth to cover them completely. Simmer until cooked through (15-20 minutes).
  4. Remove and shred the chicken using two forks.
  5. Return shredded chicken to the pot along with beans, green chiles, corn, and remaining broth. Stir gently before adding cream cheese cubes.
  6. Simmer for another 10 minutes until heated through and creamy.
