  • 1 stick softened butter
  • 1/3 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg (room temperature)
  • 2 & 1/3 cups flour
  • 1/4 tsp salt
  • 3/4 tsp baking powder
  • 3 oz cream cheese (softened)
  • 1/2 cup brown sugar
  • 5 oz pumpkin puree
  • 2/3 cup heavy cream (cold)
  • 1 tbsp white sugar
  • 1 tsp vanilla extract
  • 2 tsp pumpkin pie spice
  • Orange gel food coloring

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together softened butter, vegetable oil, granulated sugar, and powdered sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. Gently fold in flour, salt, and baking powder until just combined.
  5. Scoop out nine balls of dough onto the baking sheet and flatten each to about an inch thick. Press down in the center to create space for filling.
  6. In another bowl, mix cream cheese, brown sugar, pumpkin puree, heavy cream, white sugar, vanilla extract, pumpkin pie spice, and orange gel food coloring until smooth.
  7. Spoon the filling into the center of each cookie ball.
  8. Bake for 8-9 minutes or until just set but still soft. Allow to cool on the baking sheet before transferring to a wire rack.
