  • 1 cup salted butter, room temperature
  • 1 cup granulated sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1/3 cup strawberry jam
  • 2 ounces cream cheese
  • 2 cups powdered sugar
  • 1/4 cup hot milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Blend freeze-dried strawberries into a fine powder.
  3. In a large bowl, cream together the room temperature butter, sugar, and vanilla until fluffy. Add the egg and mix well.
  4. Gradually add flour, baking soda, part of the strawberry powder, and salt; gently fold in strawberry jam.
  5. Roll tablespoons of dough into balls and place on the baking sheet.
  6. Bake for about 8 minutes; lightly tap the sheet to flatten slightly and bake for another 2-3 minutes.
  7. For the icing, combine cream cheese, powdered sugar, hot milk, vanilla extract, and remaining strawberry powder until smooth. Adjust milk for desired consistency.
  8. Once cooled, dip or drizzle icing over cookies.
