  • 15-ounce whole milk ricotta cheese
  • 12 ounces mini chocolate chips
  • 1 teaspoon vanilla extract
  • 2 cups heavy whipping cream
  • ¾ cup powdered sugar

Instructions

  1. Prepare the pound cake by freezing it for about 30 minutes, then slice it into ¼-inch pieces.
  2. Heat 1 cup of heavy whipping cream in a microwave-safe bowl until hot but not boiling. Add 1 cup of mini chocolate chips and stir until smooth.
  3. In another bowl, whisk together ricotta cheese, powdered sugar, and vanilla extract until creamy. Gently fold in ½ cup of mini chocolate chips.
  4. Whip the remaining heavy cream until stiff peaks form and fold it into the ricotta mixture until combined.
  5. In an 8×8-inch pan, layer pound cake slices, followed by half of the ricotta filling. Repeat with another layer of cake and the remaining filling, topping with one last layer of pound cake.
  6. Pour the cooled ganache over the top layer of pound cake and chill for at least three hours or overnight.
  7. Before serving, sprinkle with additional mini chocolate chips if desired.
