  • 1 ¾ cups All-purpose flour
  • 2 cups Granulated sugar
  • ¾ cup Unsweetened cocoa powder
  • 2 tsp Baking powder
  • 1 ½ tsp Baking soda
  • 1 tsp Salt
  • 2 large Eggs
  • ½ cup Vegetable oil
  • 1 cup Buttermilk
  • 1 cup Hot coffee
  • 8 oz Semisweet chocolate
  • 2 cups Heavy whipping cream
  • 1 tbsp Powdered sugar
  • 1 tsp Vanilla extract
  • 6 oz Bittersweet chocolate
  • ¾ cup Heavy cream
  • 1 tbsp Light corn syrup
  • 1 tbsp Butter

Instructions

  1. Preheat your oven to 350°F (175°C) and grease round cake pans.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, combine eggs, vegetable oil, buttermilk, and hot coffee until blended.
  4. Mix wet ingredients into dry until just smooth; do not overmix.
  5. Divide batter among prepared pans and bake for 25–30 minutes or until a toothpick comes out clean. Cool completely.
  6. Melt semisweet chocolate and let it cool slightly.
  7. Whip heavy cream with powdered sugar and vanilla until stiff peaks form.
  8. Fold melted chocolate into whipped cream gently.
  9. Assemble cake layers with mousse in between; refrigerate for at least 3 hours or overnight.
  10. Prepare ganache by heating cream and mixing with chopped bittersweet chocolate until smooth.
  11. Spread ganache over chilled cake before serving.
