  • 8 oz dry rotini pasta
  • 9 oz hard turkey slices, chopped
  • 6.5 oz turkey pepperoni, chopped
  • 1 cup canned artichoke hearts, drained & quartered
  • 2 cups cherry tomatoes, halved
  • 1 cup pitted olives, halved
  • ½ cup sliced pepperoncini
  • 8 oz mozzarella pearls
  • ¼ cup thinly sliced red onion
  • ⅓ cup fresh basil
  • ½ cup olive oil
  • ¼ cup red apple vinegar
  • 2 garlic cloves, minced
  • 1 Tbsp Italian seasoning
  • ¼ tsp red pepper flakes
  • Salt & black pepper, to taste

Instructions

  1. Cook the rotini pasta according to package directions until al dente. Drain and set aside to cool completely.
  2. While cooling, whisk together olive oil, red apple vinegar, minced garlic, Italian seasoning, red pepper flakes, salt, and black pepper in a bowl or jar.
  3. Chop turkey slices and turkey pepperoni into bite-sized pieces. Halve cherry tomatoes and slice olives and red onion. Thinly slice fresh basil.
  4. In a large bowl, combine cooled pasta with all prepared ingredients. Pour over desired amount of vinaigrette and toss until well-coated. Chill in the refrigerator for at least 30 minutes before serving.
  5. Serve chilled or at room temperature with optional garnishes like shredded Parmesan cheese and additional basil.
