  • 8 oz rotini pasta
  • 2 cups corn (fresh or frozen; grilled preferred)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup crumbled cotija cheese
  • 1/4 cup chopped fresh cilantro
  • 1 green onion, sliced
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package directions until al dente. Drain and rinse under cold water. Set aside.
  2. If using fresh corn, grill it until lightly charred, then cool and cut off the kernels. For frozen corn, simply thaw and drain.
  3. In a large bowl, mix together mayonnaise, sour cream, lime juice, chili powder, salt, and pepper until smooth.
  4. Add cooked pasta, corn, cotija cheese, cilantro, and green onion into the bowl with the dressing. Toss gently to combine.
  5. Adjust seasoning as needed and chill in the refrigerator for at least 30 minutes before serving.
  6. Garnish with extra cotija cheese and cilantro before serving.
