  • 1 (14-16 pound) whole turkey
  • Salt & pepper (to taste)
  • 1 cup unsalted butter (softened)
  • 1 tablespoon fresh sage (chopped finely)
  • 1 tablespoon fresh thyme (chopped finely)
  • 1 tablespoon fresh rosemary (chopped finely)
  • 4 cloves garlic (minced)
  • 1 lemon (halved)

Instructions

  1. Take the turkey out of the fridge and let it reach room temperature (about 1 hour).
  2. In a bowl, mix softened butter with fresh herbs, garlic, salt, and pepper.
  3. Preheat oven to 450°F; adjust rack to bottom third.
  4. Pat the turkey dry, season generously inside and out, and stuff with lemon halves and fresh herbs.
  5. Rub the herb butter all over the turkey.
  6. Roast breast-side up at 350°F for approximately 13 minutes per pound until internal temperature reaches 165°F.
  7. Let rest for at least 20 minutes before carving.
