  • 1 tablespoon extra-virgin olive oil (divided)
  • 1½ cups water (room temperature)
  • 1 teaspoon active dry yeast
  • 3 cups bread or all-purpose flour
  • ½ teaspoon dried oregano
  • 1 teaspoon kosher or fine sea salt
  • 2 teaspoons finely chopped fresh rosemary

Instructions

  1. Preheat your oven to 400°F (204°C) and roast the garlic by drizzling it with half the olive oil, seasoning with salt and pepper, wrapping it in foil, and baking for about 30–40 minutes.
  2. In a bowl, dissolve the yeast in room-temperature water; let it sit until frothy (10–15 minutes).
  3. In a large bowl, mix flour, oregano, salt, and rosemary. Add yeast water and smashed roasted garlic along with remaining olive oil; stir until sticky.
  4. Cover the dough with a towel and let it rise at room temperature for 8–10 hours.
  5. Shape into a ball on a floured surface, place seam-side up in a floured bowl, cover, and refrigerate from 1 hour to 48 hours.
  6. Preheat your Dutch oven to 450°F (232°C). Score the dough's top with an X and bake covered for 30 minutes; then uncover and bake another 15–20 minutes until golden brown.
  7. Cool on a wire rack for at least an hour before slicing.
