1 lb boneless, skinless chicken breasts
4 cups chicken broth
1 can (14 oz) coconut milk
2 tablespoons red curry paste
1 tablespoon soy sauce
1 onion, diced
2 garlic cloves, minced
1 red bell pepper, sliced
Juice of 1 lime
Fresh cilantro for garnish
Instructions
Prepare your ingredients by dicing the onion, mincing the garlic, and slicing the red bell pepper.
In a slow cooker, combine chicken breasts, chicken broth, coconut milk, red curry paste, soy sauce, diced onion, minced garlic, and sliced red bell pepper.
Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is cooked through.
