1 cup mayonnaise
1 (8 oz) block cream cheese, softened

Instructions
First things first! If you're using fresh corn, cut the kernels off the cob. For canned corn, simply drain and rinse it well. If you've opted for frozen corn, make sure it's thawed and any excess moisture is drained off. For an extra layer of flavor, consider roasting the corn in a dry skillet over high heat for about 3–4 minutes until it's slightly charred.
In a large bowl, combine the sour cream, mayonnaise, and softened cream cheese. Use a spatula or hand mixer to stir until everything is smooth and creamy. If your cream cheese feels too firm, don’t hesitate to use the hand mixer—it will help achieve that delightful texture we’re aiming for!
Stir in both shredded cheddar and pepper jack cheeses. Then mix in garlic powder, onion powder, smoked paprika, chili powder along with salt and black pepper. Make sure everything is well combined.
Gently fold in your prepared corn along with any optional fresh ingredients like green onions, red bell pepper, jalapeño, and cilantro if desired.
For Cold Corn Dip: Cover your bowl with plastic wrap and refrigerate for at least 30 minutes before serving.
For Hot Corn Dip: Preheat your oven to 375°F (190°C). Transfer the dip mixture into a baking dish and sprinkle some extra shredded cheese on top. Bake for about 20–25 minutes until it's hot and bubbly.
