  • 2 lbs beef short ribs
  • 3 large yellow onions, thinly sliced
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 6 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • 6 slices of baguette or crusty bread, toasted
  • 1 1/2 cups shredded Gruyère or Swiss cheese

Instructions

  1. Sear the beef short ribs in olive oil over medium-high heat until browned on all sides; set aside.
  2. In the same pot, melt butter and add sliced onions. Cook slowly until caramelized (about 20 minutes).
  3. Add minced garlic and cook for another minute before returning short ribs to the pot.
  4. Pour in beef broth, Worcestershire sauce, bay leaf, thyme, salt, and pepper. Bring to a simmer.
  5. Cover and simmer on low heat for about two hours until the meat is tender.
  6. Toast baguette slices under the broiler until golden brown.
  7. Remove short ribs from soup, shred meat, and return to pot. Serve in bowls topped with toasted bread and cheese under the broiler until bubbly.
