  • 6 tablespoons unsalted butter, divided

  • 2 dried bay leaves
  • 2 1/2 teaspoons kosher salt, divided, plus more as needed
  • 1/2 teaspoon freshly ground black pepper
  • 3 medium carrots
  • 3 medium stalks celery
  • 3 cloves garlic
  • 2 pounds boneless, skinless chicken breasts or thighs
  • 6 cups low-sodium chicken broth
  • 3/4 cup dry white grape juice
  • 1 tablespoon dry apple juice
  • 1/4 cup all-purpose flour
  • 1/2 baguette
  • 2 ounces Gruyère cheese

Instructions

  1. Peel and slice onions thinly. In a large pot over medium heat, melt 4 tablespoons of butter and add onions, thyme, bay leaves, salt, and pepper. Sauté until caramelized (about 30-40 minutes).
  2. Add minced garlic, chopped carrots, and celery; cook until softened.
  3. Nestle chicken into the pot and pour in broth along with grape juice. Bring to a gentle simmer.
  4. After 15-20 minutes, remove chicken, shred it, and thicken soup by mixing flour with some broth before stirring back into the pot.
  5. Return shredded chicken to the pot and let simmer for another 10 minutes while preparing toasted baguette slices topped with cheese.
