  • 300 g cavatappi macaroni
  • 1/2 cup beef broth
  • 3 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tsp oregano
  • 1 tbsp flour + 3 tbsp water (for bécchicken chicken hamel)
  • 1 tsp sugar
  • 1 tbsp garlic powder
  • 1 tbsp smoked paprika
  • 1/2 tsp nutmeg

Instructions

  1. Begin by caramelizing the onions in olive oil over medium heat for 30–40 minutes until golden brown. Stir occasionally to avoid burning.
  2. Add the beef broth to deglaze the pan and simmer for another 10 minutes. Set aside.
  3. In the same skillet, whisk flour with butter over low heat before gradually adding heavy cream until thickened. Stir in two-thirds of the caramelized onions.
  4. Season with salt, pepper, chopped parsley, and stir in grated Parmesan cheese.
  5. Cook cavatappi macaroni until just shy of al dente; drain and combine with the sauce.
  6. Transfer everything into a baking dish; top with remaining onions and breadcrumbs.
  7. Bake at 350°F (175°C) for 10–15 minutes until golden brown on top.
